Alright. Y'all make me feel better.

The beer might suck, but I'll learn something.

Boob, it was the kid behind the counter. He knows his stuff but he doesn't butt in. I didn't drive, but considering that it was on a bottling day I imagine my friend shouldn't have either.

You know, that bottling is thirsty work.

As an update, it's bubbling away happily. I'll keep everyone informed when it's done.

Well, it's been about two weeks and yesterday was bottling day.

I opened the fermenter and was overwhelmed by the smell of bananas.

"It smells like banana bread" my friend said.

"More like troop of gorillas had an orgy in our fermenter"

Taste is...interesting. The esters were pretty high and the fruity/wheat taste is pretty damn odd. On the other hand, I now have 2 cases of banana bread in a bottle for that thirsty commuter on the go who doesn't have time for breakfast.

I think that sounds pretty good... then again, I love bannana bread.

Give it a month or so to age out and maybe some of those esters will drop and you will be left with a nice pleasant ester profile.

What was your OG & FG, btw? Did you use White Labs Cider Yeast or a dry packet of yeast?

And as a final note, I always keep 2 packets of dry yeast in my kegerator, just in case I am ever a dumbass and screw up my yeast or if I ihave a stuck fermentation. Always keep a few around, just in case.

OG was 1.059, FG 1.02.

It was the white labs cider yeast. One of those smash packets.

Opened a bottle last week and it was every bit as bad as one can imagine. After drinking a bottle it feels like you have a lump of dough in your gut. The monkey smell continues, prompting comments from non brewers like "what in the name of fuck is that smell?" I've only had one positive review of the beer, and that was by a neighbor who thinks that a beer isn't malty enough unless you can walk on it, or eat it with a fork. When he commented that it seemed brewed to style I realized that not only was he mad, but potentially a hazard to himself and others. For his own good I may have him locked away.

So now the beer sits. The label bears warning that it's not a safe beer to drink. I'll be trying a bottle every month or so to see what happens. I'll keep everyone posted.
