What type of fruit will you use?
When will you add the fruit and how much?

I guess I left that out didn't I.

Anyway I will add a can of Oregon brand cherry puree after I rack to seconday. I will let that sit for 3 weeks or so, crash chill to get everything to settle out and then rack to a keg.

Oregon Fruit Co. Sweet Cherry Puree is what you want. Go to Wine bases in the left drop down box, then select Oregon Fruit Products from the right drop down box. We have the best price and selection as its basically the custom made product for F. H. Steinvart & Co. Be careful with this stuff, as it has NO preservatives, and HAS pectin, plus it's about 18 GU's per 5 gallons! So a 1.054 OG will actually work out to 1.072 OG!

Prost!

Well, my beer is done, but not quite ready for primetime. I sent some to Justin to cry into if need be, but hopefully he'll just enjoy it! Taste so far is balanced with nice fruity nose and palate. I still feel it will mature with time and become a much better beer than it is atm. Any ideas about swapping some of these beers around? I'm game :)

Prost!

I haven't made mine yet and it may be awhile before I make another beer, t-minus 2 months before baby is due and we have a lot of around the house stuff to get done to prep.

There is a New Glarus Belgian Red Clone in the new Zymurgy

I going to give it a try But I'm going to use a Sour Cherry Syrup that I found from Europe for the sour cherry flavor. I will keep you updated...
