Tasty APA.....a couple two-three things....

So I brewed Tasty's APA this past Sunday. Fermenting Vye Ga Rows Lee as we speak :D

I forgot to add the mash hop (just being hasty, no valid excuse) until I was ramping up to mash-out temp. I added it at that time. I have a RIMS system, so it took me probably 15 minutes to ramp up to 168F and then I recirc'd for another 10 minutes before beginning the sparge, so the hops were in there for a bit, but not the entire mash. What do you think?

Second, I missed Tasty's note that the Cascase addition being through a hopback and if replacing it with a zero minute addition, it should be cut in half so I had a BIG charge of Cascade at flameout. I'm not worried as I figure it will just add more aroma, but again, any thoughts?

Finally, I have to split my 11 gallon batch between 2 fermenters. Should I put a full amount of dry hop per the recipe in each fermenter, or should I split the dry hop and add half of what the recipe calls for to each fermenter? I brewed this 2 years ago, and it turned out great (won 2nd BOS at Wisconsin State Fair), but I didn't take good notes and don't know what I did then. I think I split it, but was wondering what everyone else thinks. Also, does he add all the dry hop at once, or in stages?

It sounds horrible. You should let it finish fermenting, split the total dryhops between fermenters, keg it up & ship those kegs to me as fast as you can. You, uh... umm... wouldn't want that beer near your other beers now would you. I'll make sure it's disposed of properly. Trust me. :wink: :lol:

I wouldn't worry about the mash hop too much. I've done his APA & Janet's both with & without mashhopping. There's a slight difference, but it's delicious either way. Same with the flameout hops. You might get a little extra perceived bitterness & a bigger Cascade flavor note, but again, I'd bet it'll be great. I don't remember about his dry hopping technique, stages vs 1 shot, but either will work good. I'd definitely split the dry hops between the fermenters - over doing it with Cascade in the dry hop can give too much of that grassy flavor.

Now I'd better be seeing a keg of that showing up here in the next couple weeks. :D

Thanks for the reply Oz. I get your point about the dry hop, but just as a point of clarification, there is no Cascade in the dry hop. Only Columbus, Centennial and Simcoe. I'm sure your point holds true either way. :jnj

My bad. I mean... throw some fucking Cascade in that bitch!!! :lol: Yeah, they'll all do it, but Cascade, Centennial & a couple others tend to go grassy real easy, comparatively. I've gone way overboard with Simcoe & didn't get nearly as much grassy-ness as I do going just a little over with Cascade. Some are just a little touchier than others.

Personally I'm not into cloning others' recipes. I'll take them as a base & then have some fun in ProMash for a while & brew my own take on it. The only exceptions are Tasty's recipes, which I've altered to fit my system, but that's it. One moment I'll never forget is when met Tasty at GABF a few years ago. I was working for a local brewery & when he found out... well the next thing I knew, I was being dragged to our booth to share our APA with McDole himself. "That's a good APA, very well attenuated." 2 minutes later I was at the pro-am booth, trying my first sip of Janet's, face to face with the master himself. Some call Jamil the Pope. If that's so, Tasty, you're a god among men. :D :jnj
