Rocket Fuel

I brewed what I thought was going to be a double ipa about three weeks ago. The issue is that I used WLP099 (Super High Gravity) yeast. My local homebrew store was out of the San Diego Super Yeast and for some reason I thought it would be a good idea to substitute in the WLP099. OG was 1.064, I just pulled a sample and it measured 1.000. This stuff is 8.5%+ of rocket fuel, undrinkable. I was thinking I could try to turn it into a barleywine by steeping a bunch of crystal and other various darker malts and then adding it to the fermenter/keg. The issue I can forsee is that the yeast will continue with these fermentables and eat through my steeping addition as well. I was also contemplating pasteurized the beer to kill the 099 and then add my steeping grain addition. I need some thoughts as to how to save this $50+ beer.

You are better off brewing a different batch that balances out the thing you have too much of (or too little of) and blending them.
Trying to steep or otherwise add unfermented wort just never comes out right.

If you are detecting massive amounts of fusel alcohols (nail polish or solvent like) either in the taste or aroma (or both), then you might have yourself a dumper. Sometimes even blending doesn't help situations like this especially in highly hopped beers like your double IPA. The hops seem to become amplified with bitterness and harshness in this aspect. Fusel alcohols don't really ever completely fade (at least in my observations) and I just can't stand them in any beers.

If it were me, I would dump the beer and chalk it up to a learning experience. I know it is an expensive brew and extra money can be hard to come by, but in the long run it is just beer, and a fusel bomb can lead to some nasty hangovers the next day which you don't want. Just my 2 cents which isn't worth much these days. :bnarmy:
