How long do I have to wait after adding pectic enzyme to my must before pitching my yeast? Is it ok to shake up and aerate the must after adding the pectic enzyme and yeast? At what point can I add some yeast nutrient?
You might run the risk of losing much of your dissolved O2 if you aerate too early before pitching yeast, as it can come out of solution somewhat easily.

They were all quite similar, but my base was very simple. I haven't had any in a couple weeks, so need to go back to them and see if there is more difference that I can pick up now.
