Jamil's Strict Observance Tripel

I'll brew Jamil's tripel from BCS next week. I want to split the batch in 2 fermentors and do something "special" with the second one. Any idea?

Oak age with a bit of Chardonnay blended in. Maybe use some sour dregs as well to add to the complexity.

hmmm now I want to drink one right now..... that will be hard for a beer that will be ready in a while..... Any other ideas?

I made 10 gallons of that beer last spring and split it in two. One half I fermented with the suggested yeast. The other half I fermented with a wine yeast (Lallemand 71B if I remember right) down to about 1.020 and then added Wyeast's Roselare blend. It's sitting in my basement with a nice pellicle now. That wine yeast created some very interesting flavors. Very fruity a lot like a belgian yeast.

Yeah... changing yeast may be a good idea too. How was the one with the suggested yeast?

Awesome! I still have quite a bit left since soon after it was ready to drink we found out my wife was pregnant and she told me that if the triple was gone before she could drink it again she would be none too happy with me. :)
