Hey brewers - any results from these brews? Thinking of adding maple to the Dirty Water Brown from JZ. Thinking 5 gal, 16 or 32 oz of grade B syrup - adding .2 oz of fenugreek as well. Thoughts?

mushroom huh, weird, never heard of these things, but wiki says they have a strong maple smell. I wonder how you use them, whole dried ones added near the end of the boil or use powdered or...?

I brewed a beer once with maple syrup and fenegreek seeds that wasn't too bad. One cool side effect is fenegreek will make your pee smell like maple syrup.

Okay, that is just weird. Although I wouldn't mind having a "pee-off" with you after I ate some asparagus :lol: !!

Maple Sap + Syrup beer can be in your yearly rotation. All you need is a couple Maple Trees, old racking cane stubs for spiles, and old racking hose for collection...I make this every spring and it comes out quite nice with a clear, complex maple flavor. The maple sap and syrup combination provides an interesting flavor (like a honey addition) but the yeast seems to sometimes have trouble fermenting it out dry.

MAPLE CREAM ALE

5GAL Fresh Maple Sap, Reduce to 3GAL before beginning

1.5# American 2-Row Pale Malt
.5# English Crystal Malt 10°L
.5# American Wheat Malt
.25# American Victory Malt

3QT reduced Sap ~140°F to grains
hold 133°F 30min
1.5QT reduced Sap ~210°F to raise temp
hold 152°F 60min
raise to +167°F
Sparge with 1.5GAL reduced Sap ~170°F
collect ~2.5GAL
top-off with rest of reduced Sap

Begin Boil:
4# English Light DME 60min
1# Wheat DME 60min
.25oz Perle pellets 60min
.5oz Cluster pellets 60min
.25oz Libery pellets 20min
.5oz Mt. Hood pellets 20min
1/2tsp Irish Moss 10min
.5oz Tettnanger 5min
1C Maple Syrup 5min

3GAL Maple Sap, not reduced, 40° in Carboy

Wyeast 1056 American Ale
pitch 70°F
primary 65°F 6 days
secondary 60°F 14 days
lager 40°F 28 days
condition 60-65°F

Bottle: 2C Maple Syrup + 4C Water + 2 Tbsp Yeast Nutrient, boiled

I know the hop schedule is a bit much, but the first time I made it I didn't like just one hop variety for this beer and am still trying to dial it in...
