"Pumpkin" Beer Recipe... need comments

Mon Sep 11, 2006 10:45 am

Alright, so I am going to brew a "Pumpkin" Beer soon. I say "Pumpkin", because following the advice of Denny + Others I have decided against using pumpkin (I'm doing extract) and will be using maltodextrose. I am open to any comments.

Grain:
.5 Lbs Special B Malt
.5 Lbs Crystal 60L

Sugar:
7 Lbs UltraLight LME
1 Lb Honey (Orange Blossom)
0.75 Lbs Maltodextrose

Specialty:
2 Cinnamon Sticks (15 Minutes)
1 Whirlfloc (15 Minutes)
.5 Oz Sweet Orange Peel (10 Minutes)
.75 Oz Pie Spice (3 Minutes)
1 Cinnamon Stick (0 Minutes)

Hops:
0.5 Oz Willamette (45 Minutes)
0.5 Oz Styrian Golding (15 Minutes)

Yeast:
White Labs WLP001

Thoughts?

You may want to put in some nutmeg, if you're looking for a pumpkin pie kind of flavor. Or maybe some Chi Tea.

Not a bad idea, I think it is covered by the "Pie Spices". What about the rest, you think it will work well?

If I were making it I'd put in some more dark grains, like another Crystal, or even that Pale Chocolate that Jamil is always talking about. That's just me though, I always kind of imagine pumpkin beer to be similar to a spiced winter beer, but with pumpkin instead. But I'm not real sure what you are going for.

seems like a lot of cinnamon. 3 sticks plus what's in the pie spice mix.

spices go a long way. I might consider 2 sticks in my 10 gallon recipe.

Definitely want nutmeg, but it's in the spice mix. You'd be best off just using the spice mix, and use 1/2 as much as you think you'll need.

Personally, I like my pumpkin beers with a brown ale base.

Awsome. Thanks for the advice guys. As it turns out I am not actually going to get to do this brew for a while. I wound up getting a new job and am moving on very short notice.
