I just brewed a saison that started about 1.084 started fermtation at 69 and raised the temp over the course of two weeks to 80. It finished at 1.020 so I added two liters of wyeast 1056 and held it at 70. After two weeks It droped to 1.012 and tastes great.

Wyeast 3724 generally for me also but I tried the Fermentis T-58 on my last one and it turned out quite nice. Nice if you brew on the spur of the moment or can't do starters...
