Cal Common Fermentation Time?

Tue May 19, 2009 12:31 am

Hey everybody! I'm a newish homebrewer and I'm working on my first Cal common/steam beer. I was wondering:
how long should I leave a Cal Common in fermentation before bottling? Should it be left longer than the usual two weeks, like a lager? Or is the best way to know when it's ready just to take a hydrometer reading?

Cheers

Best leave it for 2 weeks providing fermentation is done. With a healthy yeast starter and fermentation around low 60's the beer should be ready and conditioned then. Although, if you have the capability to lager it around 35-40 degrees for several weeks it will definitely improve (like a lager).
