Well, it IS a sanitizer, not a sterilizer. And not omnipotent.

remember, starsan only works at a ph of < 3. If you have krausen added to it, it will raise the ph of the starsan solution. krausen contains wort and yeast. wort is normally around 5 for a ph. once you run out of buffers in the starsan solution and its above a ph of 3, it will actually turn into food for yeast and bugs.

im not advocating testing your ph of the bubbler solution either :D just change it and keep it clean. if you have too much krausen blowing off, just sanatzie some tin foil and put it over the top of the carboy and let the krausen leak out of the sides. i just did that with some american brown that i used some brewers yeast on that just exploded. :pop

My star san is cloudy in about an hour. I would imagine if I used that in an airlock I it would not be a sanitizer for long.
