New brewer needs help in fermentation temp control setting

Mon Apr 20, 2009 2:09 pm

I am brewing my first beer (JZ's Blonde Ale) and am fermenting it using temperature control (67 F). Is it true that most of the fermentation takes place in the first few days? If so should I ramp the temp up a bit after this so that the beer ferments out more completely? Any info would be a great help. Thanks

+1 Keep it at 67°F for 2 weeks or so and it'll be fantastic. If you take a gravity reading after that time and find that it hasn't finished where you want it to, you can ramp it up a degree a day until you get to about 70°F. That shouldn't give you any off flavors, but try and avoid going above 70.
Cheers!
