Repitching "rinsing" yeast question

Sat Apr 04, 2009 11:23 am

I followed the brew wiki instructions and after I added the clean water, agitated and let it separate I collected the top layer in my sterile jars. After listening to a recent BrewCast it sounds like the I was supposed to collect the middle section leaving the top decanted portion and the bottom dead yeast. Is that correct? If so, do you just use a well placed racking cane to siphon the cloudy middle?

Thanks for any help!

One of the challenges in rinsing yeast is that different strains yield very different results. I've found Cal Ale, for example, to accumulate in a krausen-like way at the top, rather than settling down in a nice compact layer between lighter and heavier layers of trub.
