Re: Controversial revelations from Chris White?

Per the White show, I tried collecting yeast from the top during high krausen in a sanitized White labs yeast vial. I left it out (forgot about it) at room temp and came back the next day and it had blown the seal on the vial top and had all oozed out.

I've collected bottom yeast for a while and never had a blow-up. After the krausen falls, I just crack the bottom valve and get rid of the first runnings and then fill maybe 6 vials 80+% full. Then again, I've always stuck the vials in my 41F fridge immediately....

Still wondering which way to go. I guess I should get used to hearing "Depends".... :aaron

Remember that when you're top-cropping you're collecting unfermented wort too. That's not the case when collecting yeast from the bottom after the ferment is complete.

+1 Tasty your a frickin genious!

Make sure you chill that vial immediately if going to use at a later date. Then when you take it out of the fridge later and warm it, open the cap so gas can escape the vial. You'll get a mini fermetation right in the vial, mini Krausen and all! As Tasty has stated prevously, those top croppers are like super duper yeasties.
Enjoy Great Beer!

Mmmmm... super duper... I only top cropped once, out of this past batch, hope that its not soured by poor sani processes. If you top crop into an Erlenmeyer flask, and cover w/ tinfoil, you don't have to worry about sealing up the unfermented wort though... thats the way I go. :jnj
