Thanks Tasty!

This is my first BOS and I must say is quite an honor given the number of great beers I tasted at the competition. I'm really looking forward to brewing it on the big rig at Linden St.

Peter,
As a matter of fact I felt your comments were great.
Well thought out, constructive notes.
I like the "Vanilla?" note. I agreed with that. In fact, I did not want too much of an "Oak Bomb" & I am glad it did not come across that way.

It is amazing what the oak does to a beer.
I split the batch of American Stout putting 2 ounces of the French Oak in 5 gallons for 3 weeks.
I also entered some of the other 5 gallons of American Stout in the contest & it made it to the final 11 out 49, but it is not nearly as mellow as the oaked version.
The judges thought that they were drinking an IPA, when they had my stout. I thought that was funny.
Interesting, last year the judges said, "this is an American Stout man, hop it up would you!" So I did & this year they thought it was too hoppy.
Perhaps next year, I will find the right balance.

Thanks for your fine comments, it was great time.
I was able to judge with Beth Zengari in the Belgian & French category. What an awesome experience.

Take care,
Carlo

Congrats on the BOS! Would you mind sharing the recipe? I am planning to brew a Tripel this weekend and am tweaking the recipe. I just re-listened to the Jamil show on Belgian Tripel and it was freaking hilarious. Did you add sugar during fermentation or in the kettle? At what point during fermentation? Any tips?

Thanks, Screw Strong.
