Giant Starter for Dunkel

Alright according to Jamil's calculator I needed a 1 gallon starter for 5.5 gallons of Dunkel I'm brewing tommorow. so I've got that thing going. Here is my question. Will the starter be ready by say noon tommorow? I've never tried to do one this fast let alone this big.

The plan with the Dunkel is try to cool it down as far as I can with the IM chiller then set the kettle outside(with the lid on) till it gets down to 44. Move to fermenter and pitch.

It's been going for a week now and I've gone from 1056 to 1019. Is this normal? Seems slow considering the amount of yeast I pitched. I ended up pushing brewday back to get the starter ready.
