Help with a stout recipe (where are ya Doc?)

OK guys, I have had some great homebrew stouts and have has some terrible one. The ones I didn't like were burnt tasting. I like roasty, but not burt. I understand there is a fine line between the two, and I would love to see a recipe that has a nice roasty flavor, but not burnt. My favorite was an Oatmeal stout my friend made but he can't find the recipe. I understand too much black patten could cause that burnt flavor. Any good non burt tasting stout recipes out there? Come on Doc I know you must have one!

Thanks Travis! I though a stout had to contain roasted barley. Am I wrong on that? I haven't paid much attention to stouts in the past so my knowledge is limited.

The chocolate malt will give you a very dark colour without the burnt/roast taste. Keeps it very smooth. I have to make 10gal of this to hand out at christmas. My whole family loves it.

Roasted barley is more in keeping with the traditional irish stout (think Guinness). Make whatever you like though ;)

I use Chocolate malt in my Oatmeal stout to get the color and flavor. I don't prefer the burnt/extra-roasty either.

I'll post my recipe for you when I get home. Though Travis' looks pretty tasty too. Pretty big beer Travis, I'll bet that'll keep you warm on those long winter nights! :wink:
