Thoughts on my Weizen Ideas?

Your recipes look solid! I can say from experience that wheat/melanoidin/amarillo play nicely. Perhaps keep the fermentation temp down for the amarillo and nelson hopped beers. phenols tend to get in the way with citrus and fruity hops ( in my opinion)

I've never used Melanoidin malt before, so thanks for the reassurance :)
Fermentation temp is governed by the ambient temp in my Garage, I really need to find myself a fermenting fridge.

Good blog you've got there, you really added Mashed Yam (sweet potato to us) to a beer?! How was it? I think I would have just eaten it out of the bowl!
