Gose recipe/process check?

I plan on brewing 18g of Gose for my next beer. 15# wheat, 14.75# pils, and 2.5# acidulated(7.8% of grist) malt along with a 1# of rice hulls.
My current plan is to mash with the wheat and pils for 45 min and then add the acidulated malt for another 45min.
During the last 10 min of the boil ill add 1.5oz of sea salt, then add 1oz of crushed coriander at 5 min.
Anybody brew something similiar or use that much acidulated malt before? I am contemplating doing a seperate mash (2.5# acid malt with 2# of pils) and then adding it into the mash mash after an hour and then raising the temp for a mash out.

The recipe I am planning to use is the one Randy Mosher put in his book Radical Brewing. That recipe uses 23% pilsner, 54% wheat, 15% sour (acid) malt, and 8% unmalted oats.
Based on his recipe, your use of the acid malt appears to be a bit low so I don't think you will be overdoing it at all. I'm going to try Randy's recipe as is for my first attempt and then modify it as needed later.

I have seen many different recipes for Gose all over. Whenever I use acidulated malt I tend to get a salty addition (I do understand that salt is added to a traditional gose) to my beers that just doesnt taste right. I was planning on brewing one of these soon and wanted to use lacto to get the sourness. Was going to make a Berliner first and use the cake to repitch for the Gose. Try checking out the Mad Fermentationist's website or even peruse through the Burgundian Babble Belt for some inspiration if you are so inclined...

Try sending a pm to Petedadink. I know he has been trying to work out a recipe for awhile and brewed a few the one i had at nhc in oakland was good.

I remember there being a recipe for gose in there but would need to check the book
