Stout / old ale recipe help!?

Tue Nov 23, 2010 5:58 am

Hi,
I want to brew a winter warmer, but im not really sure what to go for. I guess I want to go for a stout, but with a strong malty flavour, so I'm not sure if it would end up nearer an old ale in style. Its been ages since I've brewed a stout, and don't really have much to go on, so this is pretty much made up of ingredients that I've got left over from previous brews. Do you think the carafa special will work? Any thoughts?

21 litres

4.5 Kg Marris otter
2.5 kg Munich malt
0.25 Kg Chocolate malt
0.20 Kg CaraAmber
0.20 kg Crystal 120L
0.20 Kg Carafa special 1
0.20 Kg Flaked oats

35g East Kent Goldings - 60mins
35g Tettnang - 60 mins
30g East Ketn Goldings - 20mins

O.G 1.059
Colour 44.2 EBC

Well you would have a interesting beer thats for sure. Its kinda hard to tell what exactly the beer would taste like using those malts. That said I would reduce the amount of Munich, Crystal 120 and carafa 1 by about 50% and add more base grain. I think your beer will be over the top in abad way if you use that much malt.
