North Coast Brewing's "Old Stock Ale"

Wed Oct 13, 2010 3:55 pm

I tasted North Coast Brewing's "Old Stock Ale" and have fallen in love with it! Does anyone know of a good recipe for this brew?

Thanks,
Gary

It might be worth trying to brew Jamil's Old Ale and see if it is close. There is a lot going on in an Old Ale and setting it up for aging is key.

I find it tastes more like an english barleywine (when it has a year+) than an english old ale. I think it's also listed in BJCP as an english barleywine.

There's a good amount of info on the web page. http://www.northcoastbrewing.com/beer-OldStockAle.htm

While I can't give a good recipe, I think this is on the dryer / crisper end of style, esp. considering that the IBUs are on the lower end and can't balance out a lot of residual sweetness. As this is >1.100 I'd mash 145 for 30 min then bring it up into the 150s to finish out, so that you can get it dry. Even if you get 80% attenuation the FG will be over 1.020, so as dry as you can for this beer I'd think. They also list 12.5% ABV, so I'd guess the numbers are around 1.115 OG and 1.022 FG or something like that (1.125 to 1.032). The former is 80% attenuation, the latter is ~75%, which might be easier to achieve.
