Fruit Lambic Information wanted

Thu Jun 17, 2010 7:36 pm

I'm interested in researching home brewing a fruit Lambic. Not too many home brewers are doing them so there seems to be a lack of good sites that I've found so far that details the process and methods used.

Anyone have experiences or good information sources to share? I'm not interested so much in your last recipe but the process and ingredients used are what I'm lacking. Another brewing friend has agreed to donate a set of fementation gear specifically to be used for sour beers and I'd like to try a Blackberry Lambic once the berries are ready.

I did a search here but not so much came up on the Lambic style that I would say gave me the info I need to start. I'm sure Brewers Publications must have a book out there. I'd like to find one.

Cheers.

Add you will only want to pitch fruit into your Lambic after initial fermentation is near complete - around 12 months iirc.

Wild Brews is a super read if keen to get into (p)Lambics. :aaron

So I'm learning that the fruit goes onto the sour beer months after the brew. I thought it was only a matter of weeks. I suppose I could freeze a bunch of berries too be pitched 8 months latter. I've done this in the past with wine and that worked well.

Thanks for the reading suggestions. Books coming soon.
