Eis Bock?

I am brewing up an Eis Bock, but have no experience with it. I am planning on just brewing up a dopple bock and then freezing just after fermentation and diacetyl rest. Is there any other techniques I should be aware of, or is it just that easy? I plan on freezing in my bottling bucket w/ spigot to rack into keg then lager right after a 2 day or so freeze. Also, what kind of ABV and gravity increase would I be looking at? Its 1.079 (estimated beersmith) OG with 1.020 FG.

One thing I remember about that show, was that Jamil said if you brew an Eisbock, you should plan for it. It should not be a Dopple Bock recipe but an Eisbock recipe. There was also lots of good info on how to freeze it.

Thanks. I will listen to it. I am trying to plan for it, but not knowing much about them.... The unknowns are "what happens after freeze"? I think my recipe is somewhat sound, but not knowing how much it will spike or change after the freeze is the money question.

Great show! There is a lot of info there. I tweaked my recipe a bit, added some pilsner and subtracted some munich.

I found the ice "fluffed up" more than I thought, so make sure you have head room. I also had to get it colder than I thought to get it to freeze - 17F I think. I chose to scoop the ice out rather than transfer the liquid because I wanted some control over how much I took out. Finally, make sure you mix very well after removing the ice. I had a great deal of striation in the keg that I did not realize until the last several pints came out as almost all water!

thats a great pointer! I will be doing this in my bottling bucket with spigot. I plan on just transfering to a keg with through the spigot. I will give it a "swirl" before hand. if you dont mind me asking, what was your recipe and how did it turn out? also how long did you freeze it for?
