Just bottled mine. 1.016 final gravity (from 1.070). Excellent!
Smells and tastes great.

I'm about to brew up another batch of this amazing recipe and realized I need to restock on chocolate malt. My LHBS stocks UK Chocolate & UK Pale Chocolate - which do you reckon would go best? I think I've always used Chocolate in the past, wondering what difference the Pale Choc would give.

Cheers,

I've tasted great versions done with Pale Chocolate as well as British Chocolate. The Russian River JBA is made with Crisp Chocolate malt.
Tasty.

Awesome. Thanks Tasty. We don't get the Crisp malts here in NZ so I think I'll spin the bottle and pick either UK Pale Choc or UK Choc.

I'm gonna brew this for my next batch for the first time, pretty excited about it.

In the recipe you have Cascade at 0 minutes. Do you steep this in the whirlpool for 30 minutes after flameout? Also, do you use the HopRocket for filtering/hop aroma, and if so, what amount do you use?

Thanks!

At flameout (0 minutes) I stir the wort with a brew spoon for 30 seconds and then I let it sit for 30 minutes. Then I pump (pull actually because the pump is on the cold side of the Therminator) the wort through the Hoprocket (upside down) filled with 4 ounces of whole hops placed in a hopsack. This takes about 15 minutes for 12 gallons. I use the Hoprocket (hopback) to filter the wort. I don't think it adds much aroma compared to dryhopping.

Thank you. So if I understand it correctly you do both a 0 minute addition of Cascade that steeps for 30 minutes and then 4 ounces of Cascade in the Hoprocket?

Are you going to put Janet's Brown on the Brewing With Style show next month? I wanted to go head to head with the best.

How do you measure the IBU contribution from the hop stand?

In the recipe there is 1.50 oz. Cascade Pellet 6.00 0.0 0 min. If I treat a 30 minute hop stand of this 0 min addition as a 15 minute boil it would contribute about 10 IBU. Would the 60 min, 15 min and 10 min additions also have a significant IBU impact from the 30 min hop stand? Then I could easily end up with a beer with 70-80 IBU? :?
