Thanks for the input. I'll probably use the late extract method. Seems to have worked for me in the past.

Bub is right, 3068 is the way to go with Hefe yeast. I love me some Hefe and I have been very pleased with that yeast and I am a devoted White Labs guy.

I popped the pack last night as I bought my ingredients by the time my Hefe wort was ready it was active and tonight it blew my bubbler off. Hell yea!

I do a 90 minute on a AG heffe cause I don't do a protien rest.
It helps coagulate all the shit out of the wort and clears it up a bit (not clear but clearer than without)
Actually with all my AG's I do a 90 minute boil... it usually works out that by the time I get it to stop from trying to boil over it's 30 minutes in anyway and time to add the hops.
