Transferred to keg yesterday. At tasting it was pretty damn good. The malt bill was solid, although there was some thick "red" sweetness that was a little strong. It may mellow out a bit over time and with carbonation, but if it doesn't I will probably go to a lower Crystal.

The hops were great. I was a little afraid that 50 IBUs would make it too bitter, but the solid malt bill really backs up the hops nicely. The only thing I may change next time is a different bittering hop, just to see how it comes out, but 50 IBUs seems to be just perfectly what I was looking for. I'm almost hesitant to dry hop because I am pretty satisfied with the aroma as it is.

Can I dry hop after carbonating?

Theoretically yes. However, the hops will provide nucleation sites for the CO2 in solution and cause massive foaming and a big mess on the floor unless you are extremely fast in getting the hops in and getting the lid back into place. I would definitely place a large bet against you getting the lid in place before making a big mess.

I put the hops in a sack in a clean, purged keg. Then rack from keg to keg while maintaining pressure between the two and you won't get any foam.
