When should WichitaBrewer add his chili extract?!

Never, you'll just ruin your batch and be the laughing stock of your friends!

IMO, beer should not hurt you, or make you choke. I like to put the chilies in my FOOD, then drink my cold beer to wash the spicy food down. To each his own, I guess...

I did taste one pepper beer that I found interesting. It was a porter that someone put chipotle (smoked jalapenos) peppers in. The spice was barely perceptable with each sip. But after the cumulative effect of drinking a full beer you knew it was there, and switched to something that didn't hurt you. That five gallons could last you several years...

I'd go with the titration process after it's kegged - as mentioned above.

Just sitting here, enjoying one of Wichita's chili beers, watching Dan Rather on the CBS news, waiting to see how this whole Terry Schiavo things gonna play out. Planning a big party excursion to New Orleans in late August, anyone interested? Book your flights now...

Anyone heard any rumors about Jamil's producer starting some sort of "brewcast" on Sundays? It'll probably suck, but we should give it a chance....

A couple of tips for my fellow homebrewers:
Sell all of your Google and Youtube (never even heard of it) stock and invest heavily in Bear-Stearnes (It's a bank; solid as a rock.....), buy a home in California (it'll be worth 3x as much by 2008), and when we win Iraq over this year, expect Republicans to sweep both houses in next year's mid term elections.
