Fermentation/conditioning temperature control. While the beer itself may not be 'crazy' it is a style that requires a non-standard approach to controlling temp through the ferment and conditioning. If you do that all the time, it may be NBD, but for someone that only brews ales, it's a step into the world of lager brewing...

Also, it's a beer that--while this trend is on the downslope--isn't very well known about or recognized in the states. Kolsch is a great beer that a lot of people wouldn't expect to find at a brewery in the heart of the Colorado Rockies but that they really should.

Also, I have a Rye IPA recipe somewhere in my files. I'll search it up and post to get some feedback.

I guess that even as much as I love Kolsch, I find it deliciously tame and it absolutely does not qualify as a "crazy" beer to me. If you want crazy,
try something out past left field like a peanut butter & pickle beer. Yes, I judged in a comp where that was actually entered. THAT'S fucking crazy. Not a Kolsch.

Mango IPA with Mariachi peppers, oddly enough it works.

Peanut butter & pickle bittered with Chinook? I could see that happening.

Great thread! Right now I'm fermenting my Aloha Pale Ale. Chico style pale ale, 1272 yeast, with Toasted macadamia nuts at 30 min and 20 oz of drained pineapple in whirlpool through cooling. Last summer I did a Habanaro Saison, and some thought that crazy but many were intrigued and wanted more. It was great with grilled pork chops. Next up is a dry hopped, chocolate honey rye saison. Bel pils base,16% rye, .5lb flaked rye, 8% Caramunich II, .3 oz Eng choc, 1lb local honey in ferm, and 3711 yeast. Dry hop with an oz each of Amarillo and Palisades. Obviously not to style. :jnj
