Try to get it a bit dryer too - 1.006 to 1.008 (at the most) is perfect! You may already be there however - make sure your hydrometer is properly calibrated (instructions here: http://www.theelectricbrewery.com/parts ... ing?page=7).

Kal and Bad Goat, thank u for all the back and forth dialogue, this is great brewing info. I find it very helpful to hear people thinking out loud. Good stuff...

I tried Kal's recipe yet again, and i had a much different experience. Same amount of extract/hops, but it's MUCH hoppier. The only thing i changed was a little less c-40, and a different hop extract brand. Also, it was a lot harder to clean up this time. I had the black goo stuck to the sides. Still can't get my OG down to the 1.006-1.008. :( So in short, I think extract brand matters, possibly a lot.

What hop extract brand did you use the first time and then this time? Just curious.

As for getting the FG down low.... how did you aerate the wort after chilling? Did you aerate again a second time 12 hours after pitching the yeast?

100% o2 at 1 Litter/minute for 2.75 minutes. I did not aetate again because fermentation had started in under 12 hours.

I'd still give it another kick of aeration after 12 hrs. It's not about decreasing the lag time but making sure the yeast as all the O2 it needs.

Keep in mind the mash schedule I have in the recipe too. Mash at 145F for 90 mins, then raise to 155F and hold for an additional 30 mins. The goal is to produce the most fermentable wort possible. Every setup is a bit different so use whatever gets you the best results.
