Hi JP....
About the white wheat...if i cant get that, what would i sub it whit ?? just regular malted wheat or flaked wheat..what...yeah so im a dumbass, but bear whit me :-)

Im sure you can just leave it out and you'll be fine. Or flaked wheat. To be honest, Im not sure it does anything :)

I have purchased this kit through MoreBeer and play to bew it this weekend. My big question is when to bottle it? I noticed that everyone in this post chain is keeging their beer.

This is what I had planned to do based on JP's instructions that came with the kit:

Ferment in the primary with the Nibs and Oak chips for 2 months, then rack it to the secondary and only transfer the Oak chips back in. Leave in the secondary for another 2-4 months, then rack to bottling bucket and bottle it.

But here is the million dollar question based on my newbie, yeast-sugar-CO2 ignorance:

"If the beer sits for 4-6 months in the fermenters before I add my boiled cane sugar and bottle it, will there be any active yeast cells avaialbe to carbonate the beer once it is bottled??"

So could JP or other brewmasters please provide me with some info....
