Looking for good beer recipe with blackberries

Tue Jun 15, 2010 8:59 am

I have access to lots of blackberries and want to make some concoction out of them. Anybody have a good recipe for a blackberry beer? It seems a wheat is an obvious choice. I don't like the clove character in some wheats, but I do like Boulevard Wheat. How can I make a wheat beer without the clove character? Any hints on procedure to use the fruit, I haven't done it before.
Thanks

Keep your temperature down. 65 or so should do it. It will take longer to ferment but the lower temperature should keep the yeast esters down.

If you don't want the clove flavours, just don't use a hefe yeast.
Fermenting - Sour/hoppy Belgian Pale
