Bottle Condidtioning with Brett

Ala Orval. I'd imagine I want very yeast free and highly attenuated beer to begin with and long warmish storage. I'll be using champagne bottles so they won't burst but I don't want geysers either. I plan to be drinking this one for a few years. Does anyone have experience or insight with this technique?

You can bottle condition with brett providing your FG is around 1.006 or below. You just don't want to let that brett have too much residual sugars to create bottle bombs for the future. Do keep in mind that the brett will continue to eat away at some of the remaining sugars drying out your beer more and adding to the carbonation levels present in the bottle. So bottle accordingly.
