You need to calibrate the kettle anyway you lazy ass. Put 15 gallons of water in that bad boy and bring it up to boil. Turn off the heat and measure the height with one of those cool metal yardsticks. Calculate the gallons per inch (I think it's about 1.35). Boil for 30 minutes. Turn off the heat and measure the height and calculate the new volume and boil off rate (multiply it times 2 for the 60 minute rate.)
