FWH settings

Fri Mar 08, 2013 5:48 am

I want to change a number of late hop additions to FWH (Beersmith 2). Do I keep the original boil times or do I use 60 mins for them all (ie., in the drop down check box).
The reason I ask is that after I changed them all to 60 mins I then adjusted the total IBu's in the recipe adjustment bar to the desired overall IBU's. Is this a legitimate approach?
Thanks

From Gordon Strong's book, "The interesting thing about fwh is the perceived affects. While measured bitterness is tested at perhaps10 percent greater than that obtained from a 60 min boil, the actual perceived bitterness seems lower to me because it has a smooth character. Some sources have suggested that a fwh addition should be calculated as providing the ibu contribution of a 20 min hop addition. Since the actual measured bitterness is higher, I'd be concerned that this approach would throw off the balance of the beer. Calculate the bitterness as a 60 min boil, but understand that it might seem lower to some palates."

I do FWH on most of my beers. I figure the ibu figure same as a 20 minute addition. I haven't found it to throw off the balance at all. While the actual bitterness as tested is higher, it's the perceived bitterness that counts towards balance.
