Late hop Cascade IPA recipe - Will it be grassy?

Sat Jan 12, 2013 5:23 am

After listening to Jamil's talk about late hop additions, I decided to make a late hop IPA recipe today. I posted the recipe below.
Do you think that the large amount of hops will add a grassy flavor to the beer, or should I be ok? I'm pumped about this batch, I think it's going to be a good one! (Although I think that every time)
Thanks for your help.

Late hop Cascade IPA - 10 Gallons
63.6 IBU's
1.062 O.G.

20 lb - Pale 2 row
5 lb - 10L Munich
1 lb - Cara-Pils
1 lb - 40L Crystal
1 lb - Rice hulls

Mash at 152 for 1 hour
Add 1 oz Columbus FWH - 30 IBU
1oz Cascade - Boil 30 min - 7.2 IBU
1oz Cascade - Boil 20 min - 4.8 IBU
2oz Cascade - Boil 15 min - 7.6 IBU
2oz Cascade - Boil 10 min - 5.7 IBU
2oz Cascade - Boil 5 min - 4.7 IBU
2oz Cascade - Boil 1 min - 3.6 IBU

Chill with Jamil-style whirlpool chiller
Pitch 1 packet US-05 in each fermenter

Welcome-

I have an IPA recipe that uses a series of 2oz late additions like this, though it's for a 10 gallon batch.

You will get a TON of hop flavor and aroma using this hopping schedule in this beer. I'm not sure if it will over-concentrate the hop character. Give it a try. I've found that grassiness usually comes from dry hops, not kettle hops. Even then, it might have a grassy nature at first but it will mellow over time.

Oh, after you make this, you might want to rebrew using a variety of hops citrusy hops such as Centennial, Citra, Amarillo, and Zythos. Compare them and see if you get more than 1 dimensional hop flavor using a mix of hops.

Thanks for the reply.
I'm brewing it right now and ended up with a 1.058 pre boil gravity. Rather than adjust it, I decided to add more hops and let it end up at around 1.072 post boil. I'll still have around a 1.000 IBU/SG ratio which is what I was looking for. Not sure how I ended up with 78% efficiency though... Usually I get around 70%. Maybe my sample wasn't stirred enough, even though I stirred it quite a bit. I also added grains about a pound at a time to the mash tun and stirred the hell out of it more than usual. Maybe I was getting more dough balls than I thought on my previous batches. Still haven't been able to get a consistent mash efficiency yet...
Anyway, I plan on brewing this a couple of times using a different variety of hops to get a good idea of each of the hops characters, always maintaining a 1.000 IBU/SG ratio. Once I get a good handle on each of the hop varities, I'll probably start to work on finding a good combination like you suggested.

On another note, god I love Beersmith! It allows me to increase my level of beer geekieness exponentially! Plus it helps me make better beer and catalog my recipes. If you don't have it, get it!

Just finished this batch. Damn, whirlpool chilling is amazing! Today is the first time I used it. With the cool ground water in Wisconsin, I was able to cool 11 gallons to 70 degrees in 35 minutes. Plus, cleanup is way easier than my plate chiller and you don't have to worry about clogging anything with 13 oz of hops!
