I brewed the firestone mission street clone and to simulate the hot whirlpool firestone performs I did a 15-20 hot wort stand before cooling. Out of habit I covered my kettle at the end of the boil since I normally start cooling and thus the hot wort sat covered. Is DMS a concern with a covered kettle during a hot stand? The boil was 90 minutes, is it sufficient that the DMS is completely boiled off?
on second thought, since I had placed my immersion chiller in prior the lid was not tight and at least a 1/2" vent at where the coils come out. I assume this would allow sufficient venting for dms to evaporate? never the less for future reference is it better to do a hot stand uncovered?
