Milky Beer !

I brewed an American Wheat beer yesterday. It started action at 6 hrs. Today I looked at it and it is MILKY looking! Like coffee with lots of cream. I am assuming its because the temp is way too high (79 deg). I am cooling it by wraping it in wet towels. Has anyone experianced this? Will the cooling help?

I think it sounds about right, but that's pretty warm.

I did a grissette once with only 30% wheat that started out as a puke egg drop soup yellow but turned out turned out fine and hit the proper SRM. Give it a few days.

I got the same thing when I did my first Wit but then it pulled around to a much more normal color a few days later.

I think that's your yeasty boys in action. The lighter the beer - the more it is affected by the white yeast in suspension. I notice it all the time on my stirplate.

American Wheat can finish a little cloudy. That is OK and to style.

Not sure if you've solved the problem yet, but I might know what is wrong. I don't think it's the wheat--30% is not enough to make everything milky. I have a few questions for you

a.) what are you using for your water? Brewing from water out of the kitchen sink or are you using water coming through a garden hose? I brewed with hose water a few batches and the beer came out very milky. Stopped using hose water and it wasn't milky anymore. In general, I've stopped passing wort through anything that isn't food grade.

b.) Are you getting good hot and cold breaks?

c.) Whirlflock? or Irish Moss?
