stop the frementation?

Help
I blended a hard cider and a vanilla mead and it is still frementing. How can I get it to stop?

I've used potassium sorbate to get a cider to stop fermenting it so I could sweeten it. This will kill the yeast though, so no bottle conditioning.

I know nothing about ciders and meads or your set up but couldn't you just chill the vessel down to 40-45ish deg F quickly and put the yeast in hibernation?
