wholly f'ing wit yeast

So, I know that Wit yeast is a bit crazy but I still had to share my experience over the last couple of days.

Started out like a normal wit, 1.049 og, started a 700 ml starter 2 days ahead of time, pitched cold, around 58 degrees f, put in temp controlled ferm. chamber and set at 68F. Fermenting in a 7.5 gallon conical, 5.5 gallons of wort.

Brewed this last friday am, had to go out of town on saturday. Realized I was fucked once this bastard started to krausen. Came back to town on Sunday. Fermenter was blown out everywhere. Cleaned up, sanitized what I could and put the whole thing back together. Dropped the temp down to 66F.

Figured I was in the clear from there on out. Went back monday am. Fucking conical was blown out again. Two gallons of head space and this fucker is still blowing out the airlock as 66F. So what the hell, same process, cleaned what I could, put her back together, dropped the temp to 64F.

Came back this am and the fucker was blown out again. Three days in a row, two gallons of head space, 64F, and this thing is still blowing out the airlock.

So when the hell is this bastard going to finally settle down? Should be interesting to see how this one turns out. Better be good considering it was Doctor Scott's recipe which included the full cereal mash which made for a long ass brew day. Zesting too many oranges and what not.

Foam control drops is all you need. I brewed 10 gallons of Wit last weekend. a dozen drops of foam control and it keeps the krauzen down.

Do you think that affects any thing in the flavor or head retention?

It has no affect on flavor, or head retention. I use it all of the time.

I do too, and I've never had any issues either. . . . . but I always wonder.
