Fermentation Times

Can anyone tell me why a production brewery can ferment ales about two weeks faster than us?
On Tap: Robust Porter | Oatmeal Stout
Fermenting: Hopdust Torture (Big Red IPA) | Irish Red Pale Ale
On Deck: ESB | India Brown Ale |

Two weeks faster than me would be 4 days before I actually brewed it, how long are your ales taken to ferment?

Mine usually take no longer than 10 days.

I would say that it's probably around 14 days but I mainly have higher gravity stuff going on. I know that plays a role too. I'm also thinking about giving the yeast time to "clean up after itself".

+1 on the filtration, and they repitch yeast, so the lag time is reduced, plus if they are using conical fermenters, then the surface area of the concave bottom makes conditioning time much shorter.

Why would filtration matter, the fermentation process still has to be complete before you filter anyway. Now if we talk aging time and carbonation and such, sure they are a lot quicker, but from starting gravity to final gravity I don't imagine they are much more than a day or two faster on average.

High gravity ales is different and probably has a lot to do with pitch and equipment and such but on your average ales there shouldn't be a big difference between SG to FG, at least AFAIK.
