Lager Yeast on top of a Ale yeast?

Fri Feb 27, 2009 8:42 am

I made a Bier De Garde on Sunday. OG 1.073, current G 1.024. (has been for a couple of days). I was shooting for the upper teens (insert joke here).

Originally I used WL European ale yeast with aeration and a large starter.

I think it tastes ok, but I want to get it a little drier. Is there any reason why I can't do a starter for the American Lager yeast, and put it in the primary? It's either that or rack to "secondary" and pitch there.

BTW the reason why I used european ale yeast in the first place was because of Jamil's recipe. The kit was a NB kit, which recommended a steam style ferment, using the lager yeast. I still have the lager yeast from the kit, so I figure why not. I know one is top fermenting and one is bottom.

What do you think?

Thanks guys.

On one of the Sunday Sessions a lady brewer - I think Tonya Corbet said if your ale won't finish; throw some lager yeast in and it will finish up. I'd go for it.
