First Last time i ever use coopers yeast

Since i dont live near any homebrew shops and didnt have any liquid yeasts on hand and wanted to brew a pale ale, went to the wine store and bought 3 packs of Coopers ale yeast from the extract section. Any way brought my wort down to 64 in 10 minutes pitched the 3 packs of rehydrated yeast and let sit at 68 for 9 days.

well.....

IT LOOKS LIKE IT"S A WIT BEER, can the1/4 of oats make it white and hazy? Im gona cold crash it see if that will make a difference, It has some strong sulfur production during fermentation.

Is this normal for such a yeast or is it the oats that have given me the white haze??

1/2 cry 20L
.25 cara pils
.25 oats

It sounds like a starch haze, though you are right, it could be unflocced yeast.

8 lbs Pale WHAT?

Assuming an AG batch (you used 8lbs of Pale Base Malt -not Pale LME):
Did you check conversion via an iodine test? How long did you mash?

Assuming an Extract batch (you used 8lbs of Pale Malt Extract -not Pale Base Malt):
The oats definitely need help being converted. Crystal 20 has no diastatic power, so yes, the 1/4 lb of Oatmeal is enough to starch up your beer.

In either case, Coopers is a medium flocc'er, so I'm a little surprised it would be "wit-like" after 9 days.
What's the current gravity? Make sure you have hit terminal gravity before crashing it.

Yea AG grambrinus pale malt, i did a 75 minute mash (on the shitter) SG was 1.040 i get about 71% efficiency
Mashed at 151, then raised temp for mash out, FG says 1.004 but i think my hydrometer if a little fucked up cause it said 1.001 last week on another batch.

What does it taste like? I ask this because I think I remember the Whiteys saying wild yeast don't floculate much and I seem to recall they also said wild yeast produce alot of sulfur

If it taste wierd, maybe innoculate it with brett and leave it be for a year.

Had a taste yesterday and its really really fruity. lots of pear and apple and some malt sweetness and almost no signs of any balance, all of which is something i did not expect. SO my Hydrometer must be be fubard casue it still has a little bit of bubbles rising to the top. and At this point i dont know what to expect. Its still a friggen wit beer. i sure as hell dont want to serve this to any of my friends.

So if i sue brett maybe that will make it worth something to talk about.
