So I've got a canister of oxygen and aa regulator that can be set at liters per minute...anyone know how many liters per gallon I should be aerating with?

I don't know the exact figure but that isn't important anyway. Different airstones will restrict the O2 flow different amounts so the flow will have to be adjusted accordingly. The proper flow rate is just enough to get a gentle bubbling through the wort. Any faster and the O2 will just be escaping to the air without being absorbed by the wort.
