Help can I do this?

I recently brewed a Brown ale. I ended up with a carboy with 5 G and one with 6.5G. I pitched 800ml starter WL001 (per Mr Malty) into both. The 6.5 is now at 1.016 and the 5G is at 1.010. I was thinking of crash cooling both to stop the ferment, or whats left of it and then blend the two. Shooting for a FG 1.012 The 5G taste to bitter. The SG was 1.061, 13 days ago and IBU of 43. Any thoughts or input????

I am assuming that you wouldn't have taken the gravity unless fermentation was close to completion. If that is the case - the yeast are done and you might was well just blend now - no need for crash cooling. You are going to get what you are going to get. If they were equal volumes, you would get something like 1.013. But since there is 25% less 1.010 - you are going to get something like 1.014.

I am assuming it is near complete as it has been 12 days. I have been struggling with low FG for the past 5 batches. I am using Mr Malty for guidance but... low FG's.... I, before this batch pulled apart all my ball valves thinking that the low FG was due to a infection (with no off flavors)..... I am thinking about letting the 6+ carboy go a few more days and then blending... I'm LOST !!!!

In addition is there any harm in crashing the ferment when it hits a SG of your looking. I'm thinking eventually I'll be controlling it with mash temp but I don't have that dialed in yet. Also could I be over pitching? would this cause my low FG?
