doing a brett beer

Tue Aug 05, 2008 12:30 pm

so i thought i would make use of my dormant bottling bucket now that i have been using my beer gun for over 8 months and turn it into a brett bucket.... so i started off making a belgian golden strong ale that i under pitched, didnt use O2 on so that the abby ale yeast would crap out in the mid 1.020's to 30's. this didnt happen at all..... it finished out to 1.008 but i really wanna still do a brett beer with this.... would it be worth it to toss a bunch of fruit and the beer in the bucket and let the brett have fun on that?? if so, what fruit would you use? i used wlp 530 for the initial fermentation and i have WLP653 as a brett culture. thanks!
Cheers!

I'd go with what's fresh in the market or how about some raisins (a la Dogfish Head Raison d'Etra)?
