mylo, I know I can keg the belgians, but when I reach for a Belgian style, I generally want a glass or two, not an entire keg. I'll keep bottling them because I enjoy letting them sit around and age, and to enjoy pulling out a bottle every once in a while. Plus I just like bottle conditioning the little bastards (saison) and it will keep my kegs free for other beer styles that are more easily sessionable. I don't mind bottling occasionally, it's just every batch that is kicking my ass.
Thanks for the info on lagering though, I thought the lagers benefited from an extended period of cold conditioning, did not realize that I could do it at room temp too with little to no ill effect.
