Isn't it theoretically possible for a pathogen to infect wort? Or is the pH already too low even prior to fermentation?

im pretty sure any pathogen needs a ph that is closer to our body's range. beer starts out in the mid 5's and goes lower as yeast ferments.

A handful of enterobacter can infect new wort, but it doesn't survive very long. You want to live forever? Go ahead and taste it. It might give you a case of the runs in the worst extreme, but if it's bubbling already, there aren't likely any enterobacter left.
