Just a quick update, always handy in this situation: the fermentation krausened after 10 hours. It's got a nice barm on top, and smells awesome.

I just think the first sachet was a duff one, as the starter is dead as a dodo in the conical bottle.

We've decided to buy more of this yeast, but we're gonna do a starter before; more for peace of mind.

I did listen to the Chris White piece on the saison show, which was dead interesting. I have this one on my iPod, and it's become a frequent re-listen one.

Always doing a starter though if you can as they are well traveled once they get here
