Pitching into OG 1092???

Wed Feb 20, 2008 4:16 pm

So... I have a 5 gallon batch Imperial Stout OG 1092 and I only pitched 1 package of dry rehydrated yeast. It took off pretty quick, about 6 hours, and had a really vigorous fermentation with plenty of blowoff. Here I am 3 days later and its still bubbling out the blowoff at about 15 bubbles a second and i was wondering if i should go ahead and pitch another pack of yeast or just stop worrying it to death.

Right on, Ive just been seeing posts of people saying "no less than 2 vials of yeast or a large yeast starter", and I always feel the need to nurse my carboys. Ill just wait though, it looks like a good healthy fermentation.

as long as it is still bubbling and you are at a 1.030 you should be fine. You don't want to dry it out too much.
on tap: horse feed oatmeal stout, brown porter, honey pale.

In Reserve: oaked imperial amber, dopplebock, imperial IPA,baltic porter.

In fermentors: Imperial stout, APA, brown porter, american brown ale, belgian pale.

It may be fermenting just fine, but keep in mind when you underpitch you really stress the yeast and you may get some off flavors from that.

Of course, in a R.I.S. you probably won't notice the subtle yeasty off flavors anyways...
