using wlp830

would WLP830 be appropriate for a Munich Helles instead of WLP 838, I just transferred my Pilsner off the yeast cake and have a lot of WLP 830.

I think so. I believe it's supposed to be a little cleaner and not "accentuate the malt" or whatever, but I wouldn't worry about that.

WLP830 is my lager yeast of choice. My main advice with it is go for a big pitch (as with any lager yeast) and keep things nice and cool. I prefer to keep my primary at 50 degrees, then raise things up to 64 when it has just a few points to go. Not only does that serve as a diacetyl rest, but it'll help out-gas the sulfur that yeast tends to kick off. You'll be fine using it in a helles. Let us know your results.

I used WLP830 for a Helles a couple of weeks ago. I'm just doing a diacetyl rest now, but when I tasted it at my last gravity reading it seemed pretty good.

I love 830 and I have used it it helles, pilzners, but my favorite for that yeast is Oktoberfest.
